Built on a foundation of smooth, velvety Brazilian Santos, we fold in a precise measure of our koji-fermented Ipanema Bourbon — a technique borrowed from Japanese cuisine and reimagined for coffee. Santos brings the body:

Brazil — Ipanema & Santos Regions
A curated blend of two exceptional Brazilian beans: a high-quality Santos for structure and body, and an Ipanema-grown Bourbon, elevated through koji fermentation, for sweetness and complexity.

Altitude

800–1,300m
Grown across Brazil’s rolling highlands, where stable temperatures and rich soil create naturally sweet, low-acidity beans with a smooth, rounded profile.

Process

Natural + Koji Fermentation
Santos beans are traditionally natural-processed for their classic chocolate-caramel character. The Ipanema Bourbon undergoes small-batch koji fermentation — introducing delicate berry notes, floral lift, and a refined sweetness uncommon in Brazilian coffees.

Roast

Medium
Roasted to harmonise the two origins: enough development for caramel depth, while preserving the bright fruit and aromatic nuance of the Bourbon component.
