Our roasts are crafted in small batches using exceptional beans from traceable farms around the world—Ethiopian heirlooms, Yemeni microlots, honey-processed lots, and other rare origins selected specifically for syphon brewing. Every roast is intentional, elegant, and made to be savoured.

We have worked with manufacturers to keep these products as close to their brand named counter-parts as possible, but also really made the products our own by upgrading certain materials, customising components and bringing our scientific coffee philosophy to every piece of hardware we put our name to.

We are documenting everything we do for social media content; So we are aiming for a whole new level of transparency. Yes, we can show exactly where all our beans come from, just like everyone else. But we hope you'll join us on social media to watch us roast, ferment and brew all by hand in our Tiktok videos. We do everything with an old school, analogue, scientific precision. Founders Matt and Haruna, a school teacher and elder-care worker- two of the hardest, most physically demanding but socially rewarding jobs, met in between in Japan. They visited the counties finest syphon coffee cafes, and quickly learned a shared love for coffee. Like, we are talking a shared obsession. Who know? Perhaps such a fixation on caffeination is a prerequisite to working two already notoriously difficult jobs, in a country famous for its exacting and demanding work culture.
Matt spent 5 long years teaching in Japan, and though he may have lost his hair he gained his life partner along the way. Now married, we have returned to Ireland to found our own coffeeshop, and bring our love of syphon coffee to a whole new island, on the other side of the world. I always felt at home as an Irishman, teaching in Japan. I know Haruna will find the Irish as welcoming, helpful and kind as I found the Japanese. And I'm more confident than ever, Japanese style syphon coffee will find a welcome home here in Ireland. There is a reason it is the most popular method of brewing coffee in Japan.
